This cookbook, published in 1959 by Kaichi Tsuji, the second-generation owner of the venerable kaiseki restaurant "Tsujiru," comprehensively covers everything related to miso soup. It delves into topics ranging from types of miso and dashi preparation to bowls, philosophical discussions on miso soup, and even includes an encyclopedia of miso soup ingredients. As Eiji Yoshikawa, who wrote the preface, states, "Miso soup is truly just miso soup. If common culinary notions or techniques are added, it ceases to be authentic miso soup." This book, through the eyes of a professional who "traveled the country in search of miso," unravels the profound depth of miso soup – which is "simple, yet difficult" – precisely because of its inherently common and everyday nature. While not every tip may be directly applicable to daily cooking, it remains a timeless masterpiece as a thought-provoking read. The preface is by Eiji Yoshikawa, the cover illustration by Kenkichi Sugimoto, and the calligraphy for the title by Rosanjin Kitaoji.
